HONEY GINGERBREAD
Moist, spicy, and delicious!
| ¾ cup Zambezi 100% Organic Forest Honey | 2 teaspoons baking soda |
| ¼ lb organic butter, room temperature | ½ teaspoon salt |
| 1½ Tablespoons freshly minced ginger | ½ cup organic sugar
| | 2 free-range organic eggs | ¾ cup boiling water
| | 2½ cups unbleached organic flour | |
Glaze
1 teaspoon candied ginger, chopped fine
Powdered sugar, hot water
- Preheat oven to 350 degrees F. While the oven is heating, lightly butter and flour a 9-inch square pan.
- Beat the butter with the sugar until fluffy and light. Add the eggs and beat well. Add Zambezi 100% Organic Forest Honey and ¾ cup boiling water. Blend well. Mix in the fresh ginger.
- Separately combine the flour, baking soda, and salt. Add to the honey mixture and blend well. Pour into prepared pan.
- Bake for 35 to 45 minutes, until a toothpick inserted in the center comes out almost clean. Let cool in pan for 10 minutes, then cool completely on a rack.
- While the Honey Gingerbread is cooling, make the glaze. Slowly add hot water, a few drops at a time, to powdered sugar until a thin glaze is formed. When the Honey Gingerbread is cool, pour the glaze over the top, then sprinkle with candied ginger. Let dry.
Serve warmed or at room temperature with cream.
